Ingredients
- 1 lb of sausage
- 1 cup of white rice
- 2 cups of chicken broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of frozen peas
- 1 teaspoon of dried thyme
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 1 cup of shredded cheddar cheese
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 lb of sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, bell pepper, and zucchini. Cook for 5 minutes, or until the vegetables are tender.
- Stir in 1 cup of white rice, 2 cups of chicken broth, dried thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Stir in the cooked sausage and frozen peas. Transfer the mixture to the prepared baking dish.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle 1 cup of shredded cheddar cheese over the casserole, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
