Ingredients
- 1 lb of smoked sausage, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add 1 lb of sliced smoked sausage to the skillet and cook until browned, about 5 minutes.
- Add 4 diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until the potatoes are golden and tender.
- Stir in 1 chopped onion, 1 diced bell pepper, and 2 minced cloves of garlic. Cook for an additional 3-4 minutes until the vegetables are softened.
- Season the skillet with 1 teaspoon of paprika, 1/2 teaspoon of dried thyme, and salt and pepper to taste. Stir to combine all the ingredients.
- Garnish with fresh parsley and serve hot.
