Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large skillet, cook the sausage over medium heat, breaking it apart with a spoon, until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the diced sweet potatoes, bell peppers, and onion. Cook for 5-7 minutes, or until the vegetables start to soften.
  • Add the minced garlic, dried thyme, paprika, salt, and black pepper to the skillet. Cook for an additional 2 minutes, stirring frequently.
  • Transfer the cooked sausage back to the skillet and add the chicken broth. Stir to combine all the ingredients.
  • Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheddar cheese on top.
  • Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
