Instructions

  • Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of sausage and cook until browned, breaking it up into crumbles. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  • Layer half of the sliced potatoes in the prepared baking dish. Sprinkle with half of the cooked sausage, onion, and bell pepper mixture. Season with half of the garlic powder, paprika, salt, and pepper. Sprinkle with 1 cup of shredded cheddar cheese.
  • Repeat the layers with the remaining potatoes, sausage, onion, bell pepper, and seasonings. Pour 1 cup of chicken broth and 1/2 cup of heavy cream over the casserole.
  • Cover the baking dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 10 minutes, or until the potatoes are tender and the top is golden brown.
  • Allow the casserole to cool for 5 minutes before serving. Enjoy!
