- 1 pound Italian sausage links
- 2 tablespoons olive oil
- 2 bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste

Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the Italian sausage links and cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced bell peppers and onions until they begin to soften, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the crushed tomatoes, dried oregano, and red pepper flakes. Season with salt and pepper to taste.
- Return the browned sausages to the skillet, nestling them into the sauce and vegetables.
- Cover and simmer for 15-20 minutes, or until the sausages are cooked through and the peppers are tender.
- Garnish with fresh basil before serving.
- Serve the sausage and peppers hot, either on its own or over cooked pasta or crusty Italian bread.
Sausage and peppers is a classic Italian-American dish that has its roots in the street food culture of early 20th century immigrants in the United States. The dish typically consists of Italian sausage, bell peppers, onions, and sometimes tomatoes, all sautéed together and served on a crusty roll or over pasta. It's a beloved comfort food that has become a staple at festivals, fairs, and family gatherings. One of the most famous renditions of sausage and peppers can be found at the San Gennaro Feast in New York City's Little Italy, where vendors have been serving up the dish for decades. In Chicago, Italian beef stands often offer their own take on the dish, with the sausage and peppers served on a hot dog bun. The key to a great sausage and peppers dish lies in the quality of the sausage and the balance of flavors. The sausage should be well-seasoned and preferably of the Italian variety, while the peppers and onions should be cooked to tender perfection without losing their natural sweetness. Today, the dish can be found on the menus of countless Italian restaurants across the United States, each with their own unique spin on the classic recipe. Whether it's served as a sandwich, over pasta, or alongside crusty bread, sausage and peppers continues to be a beloved favorite for those craving a taste of Italian-American comfort food.
