  • 1 cup beef stock

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the sausages on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden and cooked through.
  • While the sausages are cooking, place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
  • Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth. Season with salt and pepper to taste.
  • In a separate pan, heat the olive oil over medium heat. Add the sliced onion and cook for 5-7 minutes, or until softened and lightly browned.
  • Sprinkle the flour over the onions and stir to combine. Cook for 1-2 minutes, then gradually pour in the beef stock, stirring constantly until the gravy thickens.
  • Serve the sausages on top of the mashed potatoes, and pour the onion gravy over the top. Enjoy!
