Sausage and Cheese Breakfast Sandwich

Ingredients
- 4 breakfast sausage patties
- 4 slices of cheddar cheese
- 4 large eggs
- 4 English muffins, split and toasted
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions
- In a large skillet, cook the breakfast sausage patties over medium heat for 3-4 minutes on each side, or until fully cooked.
- While the sausage is cooking, crack the eggs into a bowl and beat them. Season with salt and pepper.
- In a separate non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the beaten eggs and cook, stirring occasionally, until they are scrambled and fully cooked.
- Assemble the sandwiches by placing a slice of cheddar cheese on the bottom half of each English muffin. Top with a cooked sausage patty and a portion of the scrambled eggs. Place the top half of the English muffin on top to complete the sandwich.
- If desired, wrap the assembled sandwiches in foil and place them in a warm oven (200°F) for a few minutes to melt the cheese and warm the muffins.
- Serve the sausage and cheese breakfast sandwiches immediately and enjoy!
