Avocado Sriracha Salmon Burger

Ingredients
- 1 lb fresh salmon fillet, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- 4 burger buns
- 1/4 cup mayonnaise
- 1 tbsp sriracha sauce
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a food processor, pulse the salmon fillet until finely chopped.
- Transfer the chopped salmon to a bowl and add breadcrumbs, red onion, cilantro, salt, and pepper. Mix well to combine.
- Divide the salmon mixture into 4 equal portions and shape into burger patties.
- In a small bowl, mix mayonnaise and sriracha sauce to make the sriracha mayo.
- Heat olive oil in a skillet over medium heat. Cook the salmon patties for 3-4 minutes on each side, or until cooked through.
- Toast the burger buns in the skillet for 1-2 minutes.
- Spread sriracha mayo on the bottom half of each bun. Place a salmon patty on top, followed by sliced avocado. Top with the other half of the bun.
- Serve the avocado sriracha salmon burgers immediately and enjoy!
