Ingredients
- 1 lb fresh salmon fillet, skin removed
- 1/4 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups mixed greens
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the grill to medium-high heat.
- Cut the salmon fillet into chunks and place in a food processor. Pulse until finely chopped.
- In a large bowl, combine the chopped salmon, breadcrumbs, red onion, parsley, egg, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Mix until well combined.
- Divide the salmon mixture into 4 equal portions and shape into patties.
- Place the salmon patties on the grill and cook for 4-5 minutes on each side, or until cooked through.
- In a separate bowl, toss the mixed greens with olive oil and balsamic vinegar.
- Divide the mixed greens onto 4 plates and place a grilled salmon patty on top of each bed of greens.
- Serve immediately and enjoy!
