Ingredients

  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • In a large salad bowl, combine 6 cups of mixed salad greens, 1 cup of halved cherry tomatoes, 1/2 cup of sliced cucumber, 1/4 cup of thinly sliced red onion, 1/4 cup of crumbled feta cheese, and 1/4 cup of pitted Kalamata olives.
  • In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, 1/2 teaspoon of dried oregano, and salt and pepper to taste.
  • Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  • Serve immediately and enjoy!
