Rouladen with Red Cabbage

Ingredients
- 4 slices of beef round steak, about 1/4 inch thick and 6x4 inches in size
- 4 tablespoons of Dijon mustard
- 4 slices of bacon
- 1 large onion, thinly sliced
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
- 2 cups of beef broth
- 1 head of red cabbage, shredded
- 1/2 cup of apple cider vinegar
- 1/4 cup of brown sugar
- 2 apples, peeled, cored, and sliced
- 1/2 teaspoon of ground cloves
- 1/2 teaspoon of ground allspice
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 325°F (165°C).
- Lay out the beef slices and spread 1 tablespoon of Dijon mustard on each slice. Place a slice of bacon and some onion slices on top of each beef slice. Season with salt and pepper.
- Roll up the beef slices and secure with toothpicks.
- In a large skillet, heat the vegetable oil over medium-high heat. Brown the beef rolls on all sides, then transfer them to a baking dish.
- Pour the beef broth over the beef rolls, cover the dish with foil, and bake for 1.5 hours, or until the beef is tender.
- While the beef is cooking, prepare the red cabbage. In a large pot, combine the shredded red cabbage, apple cider vinegar, brown sugar, sliced apples, ground cloves, ground allspice, salt, and pepper.
- Cover the pot and cook over medium heat for 1 hour, stirring occasionally, until the cabbage is tender and the flavors have melded together.
- Once the beef rolls are done, remove them from the oven and let them rest for a few minutes. Remove the toothpicks before serving.
- Serve the beef rouladen with the red cabbage on the side. Enjoy!
