  • 4 tablespoons of Dijon mustard
  • 4 slices of bacon
  • 1 large onion, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil
  • 2 cups of beef broth
  • 1 head of red cabbage, shredded
  • 1/2 cup of apple cider vinegar
  • 1/4 cup of brown sugar
  • 2 apples, peeled, cored, and sliced
  • 1/2 teaspoon of ground cloves
  • 1/2 teaspoon of ground allspice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  • Preheat the oven to 325°F (165°C).
  • Lay out the beef slices and spread 1 tablespoon of Dijon mustard on each slice. Place a slice of bacon and some onion slices on top of each beef slice. Season with salt and pepper.
  • Roll up the beef slices and secure with toothpicks.
  • In a large skillet, heat the vegetable oil over medium-high heat. Brown the beef rolls on all sides, then transfer them to a baking dish.
  • Pour the beef broth over the beef rolls, cover the dish with foil, and bake for 1.5 hours, or until the beef is tender.
  • While the beef is cooking, prepare the red cabbage. In a large pot, combine the shredded red cabbage, apple cider vinegar, brown sugar, sliced apples, ground cloves, ground allspice, salt, and pepper.
  • Cover the pot and cook over medium heat for 1 hour, stirring occasionally, until the cabbage is tender and the flavors have melded together.
  • Once the beef rolls are done, remove them from the oven and let them rest for a few minutes. Remove the toothpicks before serving.
  • Serve the beef rouladen with the red cabbage on the side. Enjoy!
