Rotisserie Turkey

Ingredients
- 1 (12-14 pound) whole turkey
- 1/2 cup unsalted butter, softened
- 2 tablespoons chopped fresh herbs (such as rosemary, thyme, and sage)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, smashed
- 1 cup chicken broth
Instructions
- Preheat the rotisserie grill to medium-high heat.
- Rinse the turkey and pat dry with paper towels.
- In a small bowl, mix together the softened butter, chopped herbs, salt, and pepper.
- Gently loosen the skin from the turkey breast and rub half of the herb butter mixture under the skin.
- Rub the remaining herb butter mixture over the outside of the turkey.
- Place the lemon, onion, and garlic inside the turkey cavity.
- Secure the turkey onto the rotisserie spit and tie the legs together with kitchen twine.
- Place the spit onto the rotisserie grill and cook for 2.5 to 3 hours, or until the internal temperature of the turkey reaches 165°F (75°C).
- Baste the turkey with chicken broth every 30 minutes during the cooking process.
- Once cooked, carefully remove the turkey from the rotisserie and let it rest for 20 minutes before carving.
- Carve and serve the juicy rotisserie turkey with your favorite sides. Enjoy!
