Instructions
- In a small bowl, whisk together 1/4 cup of olive oil, minced garlic, lemon juice, lemon zest, chopped rosemary, salt, and black pepper to create the marinade.
- Place the whole chicken in a large resealable plastic bag or a shallow dish, and pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours or overnight, turning the chicken occasionally to marinate evenly.
- Preheat the oven to 425°F (220°C).
- Remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes before roasting.
- Place the chicken on a roasting rack in a roasting pan, breast side up. Pour any remaining marinade over the chicken.
