  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss 2 pounds of halved baby potatoes with 3 tablespoons of olive oil, 4 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and salt and pepper to taste.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 40-45 minutes, or until the potatoes are golden and crispy, stirring once halfway through.
  • Remove the potatoes from the oven and sprinkle 1/2 cup of grated parmesan cheese over the top. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley and serve hot. Enjoy!
