Roasted Garlic Parmesan Potatoes

Ingredients
- 2 pounds of baby potatoes, halved
- 3 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 cup of grated parmesan cheese
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss 2 pounds of halved baby potatoes with 3 tablespoons of olive oil, 4 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and salt and pepper to taste.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 40-45 minutes, or until the potatoes are golden and crispy, stirring once halfway through.
- Remove the potatoes from the oven and sprinkle 1/2 cup of grated parmesan cheese over the top. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot. Enjoy!
