Instructions

  • Preheat the oven to 425°F (220°C).
  • Rinse the chicken and pat dry with paper towels. Season the inside and outside of the chicken with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of dried thyme.
  • Place the sliced apples, onion, and minced garlic in the bottom of a roasting pan. Drizzle with 2 tablespoons of olive oil and toss to coat.
  • Place the seasoned chicken on top of the apples and onions in the roasting pan.
  • Pour 1/2 cup of chicken broth into the bottom of the roasting pan.
  • Roast the chicken in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (75°C) and the juices run clear when pierced between the leg and thigh.
  • Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes before carving.
  • Serve the roasted chicken with the apples and onions from the pan as a delicious side dish.
