Roasted Brussels sprouts have a rich history dating back to ancient Rome, where they were cultivated and enjoyed for their nutty flavor. In recent years, this dish has experienced a resurgence in popularity, thanks to chefs like Thomas Keller and Yotam Ottolenghi, who have elevated it to gourmet status. The trend has spread from high-end restaurants in New York and San Francisco to home kitchens across the country. The key to perfecting this dish lies in the caramelization of the sprouts, achieved through high-heat roasting. The addition of balsamic glaze or crispy bacon can take this side dish to the next level. For the best version of this dish, head to farm-to-table restaurants in the Pacific Northwest, where locally sourced Brussels sprouts shine.
