  • 1/2 cup of arugula
  • 1/4 cup of red onion, thinly sliced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Preheat a skillet over medium heat.
  • Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
  • Place 2 slices of provolone cheese on 2 slices of bread, and 4 slices of roast beef on the other 2 slices of bread.
  • In a small bowl, mix the Dijon mustard with the olive oil and season with salt and pepper.
  • Divide the arugula and red onion between the slices of bread with the roast beef.
  • Place the slices of bread with provolone cheese on top of the arugula and red onion to form sandwiches.
  • Place the sandwiches in the preheated skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Slice the sandwiches in half and serve hot.
