Ingredients
- 8 slices of roast beef
- 4 slices of provolone cheese
- 4 slices of sandwich bread
- 2 tablespoons of mayonnaise
- 1 tablespoon of Dijon mustard
- 1/2 cup of arugula
- 1/4 cup of red onion, thinly sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat.
- Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
- Place 2 slices of provolone cheese on 2 slices of bread, and 4 slices of roast beef on the other 2 slices of bread.
- In a small bowl, mix the Dijon mustard with the olive oil and season with salt and pepper.
- Divide the arugula and red onion between the slices of bread with the roast beef.
- Place the slices of bread with provolone cheese on top of the arugula and red onion to form sandwiches.
- Place the sandwiches in the preheated skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Slice the sandwiches in half and serve hot.
