Instructions

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together 2 tablespoons of olive oil, 4 cloves of minced garlic, 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary.
  • Rub the mixture all over the beef roast, ensuring it is evenly coated.
  • Place the roast on a rack in a roasting pan and pour 1/2 cup of beef broth into the bottom of the pan.
  • Roast in the preheated oven for 1 hour, then reduce the heat to 325 degrees F and continue roasting for another 1 hour or until the internal temperature reaches your desired level of doneness (145°F for medium rare, 160°F for medium, 170°F for well done).
  • Remove the roast from the oven and let it rest for 15 minutes before slicing.
  • Slice the roast beef and serve with your favorite sides. Enjoy!
