Ingredients
- 1 cup of semolina
- 1 cup of sugar
- 1 cup of plain yogurt
- 1/2 cup of vegetable oil
- 1 teaspoon of baking powder
- 1/2 teaspoon of vanilla extract
- 1/2 cup of blanched almonds
- For the syrup:
- 2 cups of sugar
- 2 cups of water
- 1 slice of lemon
Instructions
- Preheat the oven to 350 degrees F. Grease and flour a 9x13 inch baking dish.
- In a large bowl, mix 1 cup of semolina, 1 cup of sugar, 1 cup of plain yogurt, 1/2 cup of vegetable oil, 1 teaspoon of baking powder, and 1/2 teaspoon of vanilla extract until well combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Using a sharp knife, score the batter into diamond or square shapes, and place a blanched almond in the center of each piece.
- Bake for 30 minutes, or until the top is golden brown.
- While the cake is baking, prepare the syrup by combining 2 cups of sugar, 2 cups of water, and a slice of lemon in a saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Once the cake is done, remove it from the oven and immediately pour the hot syrup over the hot cake, allowing it to soak in. Let the cake cool in the dish before serving.
- Cut the cake along the scored lines and serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired. Enjoy!
