- 1 (4-pound) beef chuck roast
- 1 cup red wine

Instructions
- In a large resealable plastic bag, combine 1 cup of red wine, 1/4 cup of soy sauce, 1/4 cup of Worcestershire sauce, 4 cloves of minced garlic, and salt and pepper to taste.
- Add the beef chuck roast to the bag, seal, and refrigerate for at least 4 hours or overnight, turning occasionally to ensure even marination.
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of chopped rosemary, 2 tablespoons of chopped thyme, 2 tablespoons of chopped parsley, and salt and pepper to taste to create the herb crust.
- Remove the marinated beef chuck roast from the bag and pat dry with paper towels.
- Rub the herb crust mixture all over the roast, pressing gently to adhere.
- Place the roast on a rack in a roasting pan and cook in the preheated oven for about 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium, using a meat thermometer to check for doneness.
- Remove the roast from the oven and let it rest for 15 minutes before slicing and serving.
