Raspberry Oreo Cheesecake

Ingredients
- 24 Oreo cookies
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 1/4 cup raspberry jam
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- Crush 16 Oreo cookies into fine crumbs. In a bowl, mix the Oreo crumbs with melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until fully combined.
- Gently fold in the fresh raspberries. Pour the cheesecake batter over the Oreo crust in the pan.
- Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
- Before serving, carefully remove the cheesecake from the pan. In a small saucepan, heat the raspberry jam over low heat until it becomes pourable. Drizzle the raspberry jam over the top of the cheesecake.
- Crush the remaining 8 Oreo cookies and sprinkle the crumbs over the raspberry jam. Slice and serve the Raspberry Oreo Cheesecake. Enjoy!
