Raspberry Mousse

Ingredients
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 1/2 teaspoons unflavored gelatin
- 2 tablespoons cold water
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a blender or food processor, puree 2 cups of fresh raspberries until smooth. Strain the puree through a fine-mesh sieve into a bowl to remove the seeds.
- In a small saucepan, combine 1/4 cup of granulated sugar and 1 tablespoon of lemon juice. Heat over medium heat, stirring constantly, until the sugar is dissolved. Remove from heat and stir in the raspberry puree.
- In a small bowl, sprinkle 1 1/2 teaspoons of unflavored gelatin over 2 tablespoons of cold water. Let it sit for 5 minutes to bloom.
- Microwave the bloomed gelatin for 10 seconds, or until it is completely dissolved. Stir the gelatin into the raspberry mixture and let it cool to room temperature.
- In a separate bowl, whip 1 cup of heavy cream with 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the raspberry mixture until well combined.
- Divide the raspberry mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.
- Garnish with fresh raspberries and serve chilled. Enjoy!
