Instructions

  • Prepare the rice noodles according to package instructions, then drain and set aside.
  • In a small bowl, mix together the vegetable broth, soy sauce, oyster sauce, sugar, and cornstarch. Set aside.
  • Heat the vegetable oil in a large pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the pan and set aside.
  • In the same pan, add the minced garlic and cook for 1 minute until fragrant. Add the broccoli and carrots, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Pour the sauce mixture into the pan and bring to a simmer. Add the cooked tofu and white pepper, then stir to combine.
  • Add the cooked rice noodles to the pan and gently toss to coat the noodles with the sauce and vegetables. Cook for an additional 2-3 minutes until everything is heated through.
