Quinoa Pasta with Roasted Vegetables

Ingredients
- 8 oz quinoa pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced red bell pepper, yellow bell pepper, zucchini, and red onion with 2 tbsp of olive oil, minced garlic, dried oregano, dried basil, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, cook the quinoa pasta according to the package instructions. Drain and set aside.
- In a large serving bowl, toss the cooked quinoa pasta with the roasted vegetables.
- Serve the quinoa pasta and roasted vegetables with a sprinkle of grated Parmesan cheese on top. Enjoy!
