  • 8 oz quinoa pasta

  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the sliced red bell pepper, yellow bell pepper, zucchini, and red onion with 2 tbsp of olive oil, minced garlic, dried oregano, dried basil, salt, and pepper.
  • Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
  • While the vegetables are roasting, cook the quinoa pasta according to the package instructions. Drain and set aside.
  • In a large serving bowl, toss the cooked quinoa pasta with the roasted vegetables.
  • Serve the quinoa pasta and roasted vegetables with a sprinkle of grated Parmesan cheese on top. Enjoy!
