Quinoa Bread

Ingredients
- 2 cups quinoa flour
- 1/4 cup flaxseed meal
- 1/4 cup chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/4 cup honey
- 1/4 cup olive oil
- 1 cup plain yogurt
- 1/2 cup water
Instructions
- Preheat the oven to 350 degrees F. Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mix together 2 cups of quinoa flour, 1/4 cup of flaxseed meal, 1/4 cup of chia seeds, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 2 eggs, 1/4 cup of honey, 1/4 cup of olive oil, 1 cup of plain yogurt, and 1/2 cup of water.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
