Instructions

  • Preheat the oven to 350 degrees F. Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, mix together 2 cups of quinoa flour, 1/4 cup of flaxseed meal, 1/4 cup of chia seeds, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  • In a separate bowl, whisk together 2 eggs, 1/4 cup of honey, 1/4 cup of olive oil, 1 cup of plain yogurt, and 1/2 cup of water.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
