Instructions

  • Preheat the oven to 375°F (190°C).
  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
  • Add the red bell pepper, zucchini, cherry tomatoes, thyme, oregano, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  • In a large bowl, combine the cooked quinoa and sautéed vegetables. Mix well to combine.
  • Transfer the quinoa and vegetable mixture to a greased 9x13 inch casserole dish. Sprinkle the grated Parmesan cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving. Enjoy!
