Quinoa and Vegetable Casserole

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the quinoa under cold water and drain well.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
- Add the red bell pepper, zucchini, cherry tomatoes, thyme, oregano, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- In a large bowl, combine the cooked quinoa and sautéed vegetables. Mix well to combine.
- Transfer the quinoa and vegetable mixture to a greased 9x13 inch casserole dish. Sprinkle the grated Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy!
