Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 2 ripe avocados
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 1/2 red onion, finely chopped
- 1 tomato, diced
- 1 jalapeno, seeded and finely chopped
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool.
