  • 1 tomato, diced
  • 12 ounces Oaxaca cheese, shredded
  • 1/4 cup fresh cilantro, chopped
  • Tortilla chips, for serving

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  • Add 1/2 pound of chorizo, casing removed, and cook until browned, breaking it up with a spoon, about 5 minutes.
  • Add 1 small diced onion, 2 minced cloves of garlic, and 1 diced jalapeno to the skillet and cook until the onion is soft, about 3 minutes.
  • Stir in 1 diced tomato and cook for another 2 minutes.
  • Reduce the heat to low and sprinkle 12 ounces of shredded Oaxaca cheese over the chorizo mixture. Stir until the cheese is melted and well combined.
  • Sprinkle with 1/4 cup of chopped fresh cilantro and serve immediately with tortilla chips.
