Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a large saucepan, melt 1/4 cup of butter over medium heat. Stir in 1/4 cup of flour to create a roux, and cook for 2 minutes, stirring constantly.
  • Gradually whisk in 2 cups of milk, and continue cooking and stirring until the mixture thickens.
  • Stir in 3 cups of shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  • Add the cooked macaroni to the cheese sauce and stir to combine. Gently fold in the pulled pork until evenly distributed.
  • Transfer the mac and cheese mixture to a greased 9x13 inch baking dish.
  • In a small bowl, mix together 1 cup of shredded cheddar cheese, 1/2 cup of breadcrumbs, and 1/2 teaspoon of paprika. Sprinkle this mixture over the mac and cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden and the cheese is bubbly.
  • Allow to cool for a few minutes before serving. Enjoy!
