Ingredients
- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup barbecue sauce
- 1/2 cup vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 hamburger buns
- Optional toppings: coleslaw, pickles, avocado
Instructions
- Using your hands or a fork, shred the jackfruit into small pieces, discarding any tough core pieces.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the shredded jackfruit to the skillet and stir to combine with the onion and garlic.
- Pour in the barbecue sauce, vegetable broth, smoked paprika, cumin, and chili powder. Stir to coat the jackfruit evenly with the sauce and spices.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20-25 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.
- Season with salt and pepper to taste.
- While the jackfruit is cooking, lightly toast the hamburger buns in a toaster or on a skillet.
- Once the jackfruit is ready, spoon a generous amount onto the bottom half of each bun. Add any optional toppings as desired, then place the top half of the bun on top.
