Created by: Howcan Team

Ingredients

  • 8 large carrots, peeled and trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup BBQ sauce

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the peeled and trimmed carrots with 1 tablespoon of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the carrots are evenly coated.
  • Place the seasoned carrots on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the carrots are tender and slightly caramelized.
  • Remove the carrots from the oven and let them cool for a few minutes. Once cooled, use two forks to shred the carrots into pulled carrot strands.
  • Transfer the pulled carrots to a large skillet over medium heat and add 1 cup of BBQ sauce. Stir to combine and cook for an additional 5-7 minutes, or until the carrots are heated through and the BBQ sauce is evenly distributed.
  • Serve the pulled BBQ carrots on buns or as a topping for salads or grain bowls. Enjoy!

Pulled BBQ Carrots have become a popular vegan alternative to traditional pulled pork. This dish originated as a creative and flavorful option for those seeking a plant-based barbecue experience. Chefs and restaurants across the United States, particularly in regions known for their barbecue cuisine such as the South and Midwest, have embraced this dish and put their own unique spin on it. The key to perfecting Pulled BBQ Carrots lies in slow-cooking the carrots to achieve a tender, "pulled" texture, and infusing them with smoky, tangy barbecue flavors. One renowned method involves marinating the carrots in a savory BBQ sauce before roasting or grilling them to perfection. Today, some of the best versions of this dish can be found in trendy vegan eateries and barbecue joints that cater to plant-based diets. Whether it's served in a sandwich, wrap, or as a standalone dish, Pulled BBQ Carrots offer a delicious and satisfying alternative to traditional barbecue fare.
