Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the peeled and trimmed carrots with 1 tablespoon of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the carrots are evenly coated.
  • Place the seasoned carrots on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the carrots are tender and slightly caramelized.
  • Remove the carrots from the oven and let them cool for a few minutes. Once cooled, use two forks to shred the carrots into pulled carrot strands.
  • Transfer the pulled carrots to a large skillet over medium heat and add 1 cup of BBQ sauce. Stir to combine and cook for an additional 5-7 minutes, or until the carrots are heated through and the BBQ sauce is evenly distributed.
