Pretzel Dog Bites

Ingredients
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- 24 cocktail-size hot dogs
- Pretzel salt or coarse sea salt, for sprinkling
Instructions
- In a stand mixer, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top and let it sit for 5 minutes, until the mixture begins to foam.
- Add 4 1/2 cups of flour and melted butter to the yeast mixture. Using the dough hook attachment, mix on low speed until the dough comes together. Increase the speed to medium and knead until the dough is smooth and pulls away from the sides of the bowl, about 4-5 minutes.
- Transfer the dough to a clean, lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1 hour, until the dough has doubled in size.
- Preheat the oven to 450°F (230°C). Line two baking sheets with parchment paper and set aside.
- In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a rolling boil.
- Divide the dough into 24 equal pieces. Roll each piece into a long rope, then wrap it around a cocktail-size hot dog, pinching the ends to seal. Place the wrapped hot dogs on the prepared baking sheets.
- Carefully place 4-5 wrapped hot dogs into the boiling water for 30 seconds. Remove them with a slotted spoon and return them to the baking sheets. Repeat with the remaining hot dogs.
- Brush the tops of the pretzel-wrapped hot dogs with the egg wash and sprinkle with pretzel salt or coarse sea salt.
- Bake in the preheated oven for 12-14 minutes, or until the pretzels are golden brown.
- Allow the pretzel dog bites to cool for a few minutes before serving. Enjoy warm with your favorite dipping sauces.
