  • 4 slices of pretzel bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness.
  • In a shallow dish, mix the flour, salt, and pepper. In another dish, place the beaten egg. In a third dish, add the crushed pretzels.
  • Dip each chicken breast first in the flour mixture, then in the egg, and finally coat with the crushed pretzels, pressing gently to adhere.
  • Heat the olive oil in a large skillet over medium-high heat. Add the coated chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Transfer to a baking sheet and finish cooking in the preheated oven for 5-7 minutes, or until the internal temperature reaches 165°F (74°C).
  • In a small bowl, mix the mayonnaise, Dijon mustard, and honey to make the sauce.
  • Toast the pretzel bread slices in a toaster or on a grill until lightly golden.
  • Assemble the sandwiches by spreading the sauce on the bottom half of each pretzel bread slice. Top with a cooked chicken breast, 2 slices of bacon, and sliced avocado. Cover with the top half of the pretzel bread.
