  • In a large bowl, combine the grated potatoes, grated onion, flour, salt, black pepper, shredded cheddar cheese, and beaten eggs. Mix well to combine.
  • Heat the vegetable oil in a large skillet over medium heat.
  • Scoop about 1/4 cup of the potato mixture and drop it into the skillet, then flatten it with a spatula to form a pancake. Repeat with the remaining potato mixture, cooking in batches if necessary.
  • Cook the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil.
