Ingredients
- 4 large potatoes, peeled and diced
- 3 leeks, white and light green parts only, sliced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons chopped chives
Instructions
- In a large pot, heat the butter and olive oil over medium heat.
- Add the leeks and sauté for 5 minutes, until softened.
- Add the diced potatoes and chicken or vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Ladle the soup into bowls and sprinkle with chopped chives before serving.
