Ingredients
- 4 large potatoes, peeled and diced
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh parsley
- 2 eggs, beaten
- 1 cup of breadcrumbs
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of vegetable oil for frying
Instructions
- Place the diced potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender. Drain and mash the potatoes in a large bowl.
- Add the grated Parmesan cheese, chopped parsley, beaten eggs, salt, and black pepper to the mashed potatoes. Mix until well combined.
- Shape the potato mixture into small cylindrical croquettes.
- Dip each croquette into the beaten eggs, then coat with breadcrumbs, ensuring they are fully covered.
- Heat the vegetable oil in a large skillet over medium heat. Fry the croquettes in batches for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
