Ingredients
- 1 lb of Italian sausage
- 4 cups of chicken broth

- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of heavy cream
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large pot, cook 1 lb of Italian sausage over medium heat until browned, breaking it into small pieces as it cooks.
- Add 4 cups of chicken broth, 4 cups of diced potatoes, 1 cup of diced onion, 1 cup of diced carrots, 1 cup of diced celery, 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in 1 cup of heavy cream and let the soup simmer for an additional 5 minutes.
