Instructions

  • In a large pot, cook 6 slices of bacon until crispy. Remove the bacon from the pot and set aside on a paper towel to drain. Crumble the bacon once cooled.
  • In the same pot with the bacon drippings, add 2 tablespoons of butter and 1/2 cup of chopped onion. Cook until the onion is translucent.
  • Stir in 1/4 cup of all-purpose flour and cook for 1-2 minutes to make a roux.
  • Gradually pour in 4 cups of chicken broth while stirring constantly to avoid lumps. Add 4 cups of diced potatoes to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches, being careful with the hot liquid.
  • Stir in 1 cup of shredded cheddar cheese and 1 cup of heavy cream. Season with salt and pepper to taste.
  • Simmer the soup for an additional 5-10 minutes until it is heated through and the cheese is melted.
