Instructions

  • Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches.
  • Stir in 1 cup of milk and 2 cups of shredded cheddar cheese until the cheese is melted and the soup is creamy.
  • Add 1/2 cup of heavy cream and season with salt and pepper to taste. Stir well to combine.
  • Simmer the soup for an additional 5-10 minutes to allow the flavors to meld together.
