Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of milk
- 2 cups of shredded cheddar cheese
- 1/2 cup of heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, combine 4 large diced potatoes, 1 chopped onion, 3 minced cloves of garlic, and 4 cups of chicken or vegetable broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches.
- Stir in 1 cup of milk and 2 cups of shredded cheddar cheese until the cheese is melted and the soup is creamy.
- Add 1/2 cup of heavy cream and season with salt and pepper to taste. Stir well to combine.
- Simmer the soup for an additional 5-10 minutes to allow the flavors to meld together.
- Serve the soup hot, garnished with chopped chives and extra shredded cheddar cheese if desired. Enjoy!
