Instructions

  • Season both sides of the pork chops with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the pork chops from the skillet and set aside.
  • In the same skillet, melt 1 tablespoon of butter. Add 8 oz of sliced mushrooms and 2 cloves of minced garlic. Cook for 5 minutes, or until the mushrooms are golden brown and the liquid has evaporated.
  • Pour in 1 cup of chicken broth and bring to a simmer. Cook for 5 minutes, scraping up any browned bits from the bottom of the skillet.
  • Stir in 1 cup of heavy cream and bring to a simmer. Cook for 3-4 minutes, or until the sauce has thickened slightly.
  • Return the pork chops to the skillet and simmer for 2-3 minutes, or until the pork chops are heated through and the sauce has thickened to your desired consistency.
  • Sprinkle with 2 tablespoons of chopped fresh parsley before serving. Enjoy!
