Pork Milanese is a classic Italian dish that originated in Milan, Italy. It consists of a breaded and fried pork cutlet, typically served with a side of arugula salad and a wedge of lemon. The dish is believed to have been inspired by the traditional Italian veal Milanese, but the pork version has gained popularity for its affordability and equally delicious flavor. One of the most famous renditions of Pork Milanese can be found at the historic Ristorante Savini in Milan, where it is prepared with utmost care and attention to detail. The key to a perfect Pork Milanese lies in the breading - a crispy, golden crust achieved by using high-quality breadcrumbs and a precise frying technique. For a unique twist, some chefs incorporate Parmesan cheese into the breading mixture, adding a rich, savory flavor to the dish. Today, Pork Milanese can be enjoyed in top Italian restaurants worldwide, with each chef adding their own creative flair to this beloved classic.
