Extra Cheesy Pork Enchiladas

Ingredients
- 1 pound pork shoulder, cooked and shredded
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (10 ounces) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 12 corn tortillas
- 1/4 cup chopped fresh cilantro
- Sour cream and sliced jalapenos for serving
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, chili powder, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
- Stir in the cooked and shredded pork shoulder, and 1/2 cup of the red enchilada sauce. Cook for 5 minutes, stirring occasionally, until heated through.
- In a small saucepan, warm the remaining enchilada sauce over low heat.
- In a separate bowl, mix together the shredded cheddar and Monterey Jack cheeses.
- Wrap the corn tortillas in a damp paper towel and microwave for 1 minute to soften.
- Spread a small amount of the warmed enchilada sauce on the bottom of the prepared baking dish.
- Fill each tortilla with a portion of the pork mixture and a sprinkle of the cheese mixture. Roll up the tortillas and place them seam side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream and sliced jalapenos. Enjoy!
