Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 pound of scallops
- 1 pound of swordfish steaks
- 1 pineapple, peeled, cored, and cut into chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1/4 cup of soy sauce
- 1/4 cup of honey
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 tablespoon of grated fresh ginger
- 1/4 cup of chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup of soy sauce, 1/4 cup of honey, 2 tablespoons of sesame oil, 2 cloves of minced garlic, and 1 tablespoon of grated fresh ginger to make the marinade.
- Thread the shrimp, scallops, swordfish, pineapple chunks, red bell pepper, yellow bell pepper, and red onion onto skewers, alternating the ingredients. Place the skewers in a shallow dish and pour the marinade over them. Let them marinate for 15 minutes.
- Season the skewers with salt and pepper.
- Grill the skewers for 3-4 minutes on each side, or until the seafood is cooked through and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and place them on a serving platter. Sprinkle with chopped cilantro and serve hot.
