Ingredients
- 1 whole pineapple, peeled, cored, and cut into chunks
- 2 lbs of boneless, skinless chicken thighs, cut into chunks
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 cup of pineapple juice
- 1/2 cup of soy sauce
- 1/4 cup of brown sugar
- 2 tablespoons of rice vinegar
- 1 tablespoon of cornstarch
- 1 teaspoon of ground ginger
- 1/2 teaspoon of black pepper
- 2 tablespoons of vegetable oil
- Cooked white rice for serving
Instructions
- In a small bowl, whisk together 1 cup of pineapple juice, 1/2 cup of soy sauce, 1/4 cup of brown sugar, 2 tablespoons of rice vinegar, 1 tablespoon of cornstarch, 1 teaspoon of ground ginger, and 1/2 teaspoon of black pepper. Set aside.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add 3 cloves of minced garlic and sauté for 1 minute.
- Add 2 lbs of chicken thigh chunks to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add 1 diced red bell pepper, 1 diced green bell pepper, and 1 diced onion to the skillet. Cook for an additional 3-4 minutes until the vegetables are slightly softened.
- Pour the pineapple juice mixture over the chicken and vegetables. Stir well to combine. Add the chunks of 1 whole pineapple to the skillet.
- Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened and the pineapple is heated through.
