  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup of pineapple chunks
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil

Instructions

  • In a medium saucepan, combine 1 cup of coconut milk and 1 cup of water. Bring to a boil.
  • Stir in 1 cup of jasmine rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  • In a bowl, mix 1 tablespoon of soy sauce and 1 tablespoon of honey. Add the chicken thighs and toss to coat. Let it marinate for 10 minutes.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken thighs and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
