Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the finely chopped onion and minced garlic to the skillet, and sauté for 3-4 minutes until the onion is translucent.
  • Add the diced red bell pepper to the skillet and cook for an additional 2 minutes.
  • Pour in the crushed tomatoes, then add 1 teaspoon of paprika, 1/2 teaspoon of cayenne pepper, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir to combine all the ingredients.
  • Create small wells in the tomato sauce and carefully crack the chicken eggs into the wells.
