- 1 pound ripe plums, pitted and halved
- 3/4 cup almond flour
- 1/4 cup granulated sugar
- 3 eggs
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon salt
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or cast iron skillet.
- Arrange the plum halves in the prepared dish, cut side up.
- In a large bowl, whisk together 3/4 cup almond flour and 1/4 cup granulated sugar.
- In a separate bowl, whisk together 3 eggs, 1 cup almond milk, 1 teaspoon vanilla extract, 1/4 teaspoon almond extract, and 1/4 teaspoon salt.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
- Pour the batter over the plums in the dish.
- Bake for 35-40 minutes, or until the clafoutis is set and golden brown on top.
- Remove from the oven and let it cool for 10 minutes.
- Dust with powdered sugar before serving.
