Instructions

  • In a small saucepan, combine 1 cup of pineapple juice, 1/4 cup of soy sauce, 1/4 cup of brown sugar, minced garlic, grated ginger, and black pepper. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side, or until golden brown and cooked through.
  • While the chicken is cooking, in a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. Once the chicken is cooked, pour the pineapple glaze over the chicken in the skillet. Add the cornstarch slurry to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the glaze thickens and coats the chicken.
  • Remove the skillet from the heat and let the chicken rest for a few minutes. Sprinkle with sesame seeds and chopped green onions for garnish, if desired.
