Ingredients
- 1 cup of arborio rice
- 2 cups of coconut milk
- 1 can (14 oz) of coconut cream
- 1 can (20 oz) of crushed pineapple, drained
- 1/2 cup of sugar
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- Toasted coconut flakes for garnish
Instructions
- In a medium saucepan, combine 2 cups of coconut milk, 1 can of coconut cream, 1/2 cup of sugar, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Bring to a simmer over medium heat, stirring occasionally.
- Stir in 1 cup of arborio rice and reduce the heat to low. Simmer gently, stirring occasionally, for 25-30 minutes or until the rice is tender and the mixture is creamy.
- Remove the saucepan from the heat and gently fold in the drained crushed pineapple.
- Divide the rice pudding into serving dishes and sprinkle with toasted coconut flakes.
