Instructions

  • In a bowl, whisk together 1 cup of pineapple juice, 1/4 cup of soy sauce, 1/4 cup of brown sugar, 2 cloves of minced garlic, 1 teaspoon of grated ginger, and 1/2 teaspoon of black pepper to make the marinade.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
  • Preheat the grill to medium-high heat. Brush the pineapple slices with vegetable oil and grill for 2-3 minutes on each side until they have grill marks. Remove from the grill and set aside.
  • Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked through and no longer pink in the center.
